It is one of the comfort foods of India that has enjoyed its own popularity over the years. Various kinds of veggies like potato, carrot, cauliflower, radish, peas were used to make these stuffed parathas and were pan-fried in ghee and enjoyed with white butter, mango pickle, green chutney, curd and even lassi/chaas. In fact, if there was any leftover vegetable, our moms/grandmas used to mash and stuff it into a paratha.
