Pathishapta Pitha is a classic Bengali sweet delight prepared by stuffing a creamy khoya kheer or coconut mixture inside a crispy rice pancake.

To make this dish at home, take a bowl mix madia, rice flour, powdered sugar, fennel seeds powder, semolina. Whisk it all together. In the meantime, heat a pan, add ghee, grated coconut, melted dates jaggery, and make a mixture. Now, heat a tawa pan, grease it with ghee/oil, pour a ladle once the pancake appears cooked and add in the mixture. Fold it and serve hot.
